He earned his medical degree from Cornell University Medical School , and holds a Ph.D. in Biochemistry from the University of Illinois . He studied further as a Post-Doctoral fellow at The Albert Einstein College of Medicine. Before entering the practice of medicine, he was an assistant professor of Biochemistry at Rutgers University . For past seven years Dr. Hunter has studied shea butter extensively, both in the laboratory and clinically. He has traveled to over a dozen countries in Africa where he has studied the processing of shea butter by various methods. His most significant contribution to the industry was the discovery that the cinnamic acid content was a reliable indicator of the quality of a given batch of shea butter. In the U.S. , Dr. Hunter is the foremost expert on the clinical usefulness of shea butter. He serves as consultant to companies and groups in both private and public sectors. Dr. Hunter is one of the founding members of the International Shea Butter Association.
